Fwd: Hominy Chicken Soup Delivery!

Hominy Chicken Soup

Ingredients

1 pkg Chicken Thighs
1/2 Onion (chopped)
1/2 Red Bell Pepper (sliced)
2 Carrots (cubed)
1 Can Black Beans (rinsed)
1 Can Hominy (Rinsed)
1 Can Chopped tomatoes
Some Frozen Corn
Chicken Stock (I used it in powered form)
Cumin
Chili Power
2 Bay Leaves
Lemon Juice
Oregano
Salt & Pepper
[section]For Topping[/section]
Chopped Cilantro
Cheese (I Used Queso Fresco, Monterrey Jack will also work)
Fried Tortilla Strips (Slice old corn tortiilas, Fry in hot oil)

Directions

In Soup Pan, Heat Oil
Add the Tri-fecta [Onion, Red Pepper, and Carrot], saute until onions are slightly transparent
While that is cooking, and cooked the Chicken in a little oil in a saute pan, seasoned with a little Cumin and Chili Powder. Once the outside was cooked and removed it, and chopped it into pieces and back into the pan.
[section]Back to the Soup[/section]
Added Cumin, Chili Powder & Chicken Stock Powder
Added Rinsed Hominy and Black Beans, Stir
Added Can of Tomatoes and about 2 cups water (or liquid chicken stock)
I let this simmer and little added the chicken once it was ready, and the rest of the spices: Bay leaves, Oregano, Salt, Pepper, and Lemon Juice.
I also added a little bit of Frozen corn near the end.

While this was simmering I made fried corn tortilla strips
Chopped up some cilantro
grated some cheese

Inception: Movie Review

Go See this movie. There is a lot of good reviews out there, So I'm just going to say go see it. Also, How can you not just love JGL?

Also, Christopher Nolan, He is really getting to be one of my Favorite Directors, I mean:
Anyways It's just so awesome, when things can come together, like a DRATW (Double Rainbow All The Way)

Book Review: Tigerheart

The way a Sequel to a Classic story, made much later, by someone else, should be made. 

I admit, I haven't read the original story of Peter Pan. But I know the story, and have seen multiple movies, so forth about Peter Pan, & Finding Never-land.
While maintaining the feel, that old-world British setting, it's a bit darker than the Disney cartoon, (which I bet is closer to the original).

The author, Peter David, was able to take the story and make it his own. There are pirates, mermaids, Indians, as well as a Tiger. I also really enjoyed his narrative, that occasionally 'broke the 4th wall', by speaking to the reader. This book I highly recommend, especially for those who sometimes feel like being an adult isn't that great.

Valentine's Day Cake Pictures!

I hope everyone had a good Valentine's Day. I made a Red Velvet Cake complete with frosting. 

The recipe that I used:

Not only did me and Jesse enjoy it, our Roommate and his friend got to try some, and We did hear all around, Best cake ever! (At least I think so!) Definitely adding this to my baking repertoire.

Next time: I might wait for the cake & frosting to cool a little bit. (I could work on my frosting skills, see cake album) Also, I only added 1oz of Red Food Coloring & it was still quite vibrant.
